Method
1. Brown the Sausage
Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it into chunks as it browns, until deeply caramelized and cooked through, 6-8 minutes. Don't rush this step—the browning is most of the flavor. Drain excess fat, leaving about 1 tablespoon in the pan.
2. Cook the Aromatics
Add the shallots and cook for 4 minutes, until softened. Stir in the garlic and red pepper flakes, if using, and cook for 1 minute more, until fragrant.
3. Build the Sauce
Pour in the pasta sauce and stir to combine with the sausage and aromatics. Simmer on low for 9-10 minutes to let the flavors come together. Season to taste with salt and pepper, then stir in the cream or butter, if using, for extra richness.
4. Cook the Pasta
While the sauce simmers, bring a large pot of salted water to a boil. Cook the pasta until al dente according to package directions. Reserve 1 cup of pasta water before draining.
5. Combine and Finish
Add the drained pasta to the sauce and toss gently to coat, loosening with reserved pasta water as needed. Top with Parmesan and fresh herbs, if using, and a squeeze of lemon juice for brightness.
